Happy Monday!! I don’t know about y’all, but by the end of the day on Mondays, I am seriously dragging. There’s not enough coffee to get me through the day, and the last thing I want to think about is cooking dinner.
On my way home tonight, I stopped at Whole Foods to grab some groceries. I am a sucker for easy meals. The less ingredients and prep time, the better. I am so lazy when it comes to cooking, but I always want a good meal. The struggle is so real.
I also love Kielbasa and any kind of smoked sausage. It’s so easy to make. All you have to do is literally throw it in the oven and voila. Magic and delicious.
Tonight’s dinner cost me about $10 and it fed 2 people plus leftovers. Recipe below 🙂
BBQ Kielbasa + Veggies
– Kielbasa of your choice (I prefer smoked or sweet hickory flavors) – about $5-6
– one bag of mini potatoes (only $2.99 @ the store tonight)
– 2-3 crowns of broccoli ($1 per pound – so cheap!!)
– any desired seasonings
First, I toss the potatoes in olive oil, salt, and minced garlic. Toss that on a pan and bake @ 425 for 15 minutes. While that is baking, cut the broccoli and season to taste. Steam either in the microwave or via stovetop. Cut kielbasa into chunks and coat with your BBQ sauce of choice (Sweet Baby Rays always, amirite).
Once the potatoes are done, add the broccoli and kielbasa to the pan, and cook for an additional 5 to 7 minutes. Season with salt and pepper to taste.
Happy New Year, everyone!
My all time favorite holiday is New Year’s. Not because you can get dressed up and clink glasses of champagne with your best friends…but because it’s a new beginning. As someone who personally loves Sunday nights and getting ready for a new work week, New Year’s is kind of like the ultimate Sunday night. You get to plan, organize, reevaluate and self reflect, which are things I love to do and find to be so important for mental health.
Hey everyone! If you’re like me, then you’re procrastinating as long as possible and avoiding the really long lines at the grocery store…ugh. I love Thanksgiving as much as the next girl, but grocery shopping on the day before Thanksgiving is not my ideal way to spend an afternoon. So instead…I’ve been Googling 101 things that I want for Christmas!
This weekend, I officially went off the deep end. Like, officially. Head first. No life jacket. I feel like recently, I’ve heard so much talk about dieting. Which makes sense, considering it’s officially holiday season. So after doing hours of Googling, I decided to do the Whole 30 Program. Right before Thanksgiving.
For those of you that are just tuning in for the first time! Welcome. For those of you that are not – feel free to skip down to the next paragraph.
This weekend, I traveled from Austin to Indianapolis to spend some time with one of my best friends, Haley, who has just moved to Indy. On my airport journey, I encountered a few spectacular human beings, one of which I will proceed to tell y’all about below.
Honestly, there’s a lot I could say about the year 2017.
I’ll be the first to admit it. I am absolutely terrible when it comes to admitting my faults. I hate admitting when I’ve messed up, or admitting when I’m in the wrong
Hey everyone! I previously published this post about a month ago before I transferred my blog from WordPress.com to WordPress.org, so I want to re-share this one more time in case you missed it!
Hey everyone! Now that our wedding is over and Colin and I are settling into back into home, I want to share some of our favorite moments from our travels to Jamaica for our honeymoon! We traveled to Montego Bay, Jamaica, and stayed at the Hilton Rose Hall Resort & Spa. We adored our stay, adored the staff, and adored Jamaica & it’s culture. Enjoy our journey through pictures!
